Ingredients for 4
  • 30 g coconut sugar
  • 50 g all purpose flour
  • 25 g cornstarch
  • 25 g almond flour
  • 4 g baking powder
  • 240 ml coconut milk
  • 1 g rock salt
  • 10 g orange blossom
  • 1 tbsp moringa powder
  • 1 handful blueberries &/or raspberries

  • Mini muffins mold
  • A few spoons
  • Cutting board
  • 1 knife
  • 20 mini muffins cups

Steps

  • Pre-heat the oven to 180C
  • Add the dry ingredients to a large bowl
  • Mix well with a whisk
  • Add the wet ingredients next and mix well again
  • Add a hanful of fresh bluberries or raspberries
  • Add the mini muffin cups to your muffin mold
  • Transfer the muffin mix to your muffin cups (filling them up to 3/4, not more as they will rise)
  • Bake for 15mins
  • Add a side of coconut yogurt and fresh fruit & enjoy!
