Pre-heat the oven to 180C
Add the dry ingredients to a large bowl
Mix well with a whisk
Add the wet ingredients next and mix well again
Add a hanful of fresh bluberries or raspberries
Add the mini muffin cups to your muffin mold
Transfer the muffin mix to your muffin cups (filling them up to 3/4, not more as they will rise)
Bake for 15mins
Add a side of coconut yogurt and fresh fruit & enjoy!
