Ingredients

  • 30 g coconut sugar
  • 50 g all purpose flour
  • 25 g cornstarch
  • 25 g almond flour
  • 4 g baking powder
  • 240 ml coconut milk
  • 1 g rock salt
  • 10 g orange blossom
  • 1 tbsp moringa powder
  • 1 handful blueberries &/or raspberries

Instructions

  1. Pre-heat the oven to 180C

  2. Add the dry ingredients to a large bowl

  3. Mix well with a whisk

  4. Add the wet ingredients next and mix well again

  5. Add a hanful of fresh bluberries or raspberries

  6. Add the mini muffin cups to your muffin mold

  7. Transfer the muffin mix to your muffin cups (filling them up to 3/4, not more as they will rise)

  8. Bake for 15mins

  9. Add a side of coconut yogurt and fresh fruit & enjoy!
