  • 60 g almond flour
  • 35 g coconut flour
  • 150 g almond butter
  • 50 g maple syrup
  • 4 g baking powder
  • Pinch of sea salt
  • Fig jam

  • 1 bowl
  • Oven
  • Parchment paper
  • 1 spatula
  • 1 scale

Steps

  • Pre-heat the oven to 180C, place a parchment paper on a baking tray
  • In a large bowl, mix all the ingredients (except for the fig jam, keep aside)
  • Wear gloves and roll your dough into balls
  • Insert a small hole in the middle of your dough to add a teaspoon of fig jam, then place the fig cookies on the parchment paper, without keeping them too close to one another
  • Bake for 15mins (this can vary based on the size of your fig newtons)
