Ingredients

  • 17 mejdool dates
  • 1 tsp coconut oil
  • 2 tsp matcha powder
  • 1 tsp vanilla extract
  • 2 tbsp almond butter
  • 35 g gluten free oats (option)
  • 2 tbsp chia seeds
  • 2 tbsp pumpkin seeds
  • 1/4 tsp rock salt

Instructions

  1. Remove the seeds from the dates (soak in hot water for 3mins if too hard)

  2. Blend together the dates, salt, matcha, vanilla, almond butter (do not add the pumpkin seeds or chia seeds)

  3. Then transfer the date mixture to a bowl and add your chia seeds and pumpkin seeds ( you can also add these to your blender, just pulse instead of blend to avoid grinding them too much)

  4. Finally, roll the mixture into small energy balls

  5. Place a parchment paper in an airtight container and place in the freezer for ±2 hours 

  6. Remove from the freezer at least 20 minutes before wanting to enjoy them

  7. Lasts up to 1 month in the freezer

  8. Résults in 12 small energy balls (or 6-8 medium sized)
